Dragonfruit Coconut Smoothie Bowl

Anytime I can start a day with a fresh smoothie bowl that includes fruits and leafy veggies, I think my day just goes better. This is such a delicious blend of coconut, pineapple, dragonfruit, and banana. And there’s a large handful of spinach in there to add some leafy protein. I love that this has no sweeteners and is dairy free – my favorite kind of smoothie! Full of whole food.

I love this kind of coconut because it’s unsweetened!

Also, if you don’t have a melon baller, it’s a great little tool to make pretty dragonfruit balls on your smoothie.

After making, pour into a bowl with some dragonfruit and coconut on top – a simple Dragonfruit Coconut Smoothie Bowl.

Dragonfruit Coconut Smoothie Bowl

This makes a full blender of smoothie (I use it for my whole family) so feel free to scale it down if you're just making it for 1 or 2 people.

Ingredients

  • 1 can coconut milk
  • 2 c. chopped pineapple
  • 1 banana
  • half a dragon fruit chopped
  • large handful of spinach
  • 3 c. ice

Instructions

  • Place all ingredients in blender except ice.
  • Blend until very smooth. Add ice and blend again to thicken and chill the smoothie. Add more or less depending on how cold you like it.
  • Once smooth, pour into a bowl and top with fruit or toppings of your choice. I used unsweetened coconut and dragonfruit and it was great.
